Vienna-Style Bagel Recipe

I am a bit nervous at the moment, while i am working on my first ever blog entry. Is it going to work? Will someone eventually read it? Will YOU guys like my recipes? I really hope so. So for this time, I won’t write much small talk. Here is the recipe for some super yummy and fluffy BAGELS 🙂


(Makes 32)

  • 1 kg flour
  • 42 g fresh yeast
  • 4 tbsp sugar
  • 2 tsp salt
  • 500 ml lukewarm water (maybe 550ml)
  • 4 tbsp soft butter


  • linseed
  • sesame
  • poppy seed
  • cheese
  • oats


1.) In a large bowl (I used our huge pot, as we do not have large bowls in our students flat) mix the flour and the salt. Make a well in the middle and pour in the sugar, yeast and approx. 200 ml of the lukewarm water. Do not stir for 10 minutes.

2.) Add the butter and the remaining water. If you have a stand mixer, lucky you. Mix for about 5-10 minutes. Otherwise you will have to do a little arm workout now. Knead the dough for at least 15 minutes. It needs to be smooth and elastic, but not too sticky. If that applies to your dough congrats! If not add some additional water/ flour.

3.) Afterwards put the dough into a bowl and cover it with a dish towel. Let it rise for about 45 minutes, or until the dough has almost doubled in size.

4.) Preheat the oven to 220C. Divide the dough into 32 pieces. Shape each part into a bowl, then use a wooden spoon or your finger to make a hole in the middle. It should be at least 2.5cm wide.

5.) Meanwhile bring a large pan of water (and 1 tsp of salt) to boil. Cook each bagel for about 20 seconds. (If that doesn’t work for you, don’t cook them. When I tried to make bagels for the first time, I did not either. In that case you should definitely brush the rolls with an egg yolk, that is mixed with 1/2 tsp of salt) Remove the bagels with a slotted spoon and drain away the excess water.

6.) Add your favourite toppings. Mine are linseed and sesame seeds! Bake in the oven for 20 min, or until golden. The bases should sound hollow when tapped. Leave them to cool.  For storing put them into an air-tight container.Enjoy!!

7.) I like them best toasted with cheese and tomato. And rocket, of course.

    Ich muss sagen da muss man schon gut backen können..
    Was bei dir ja der Fall ist
    .😊..Das probiere ich sicher mal aus. Weil es sieht super lecker 😋 aus. Ich bewundere deine Energie!! Hab am Wochenende Sachertorte aus Dinkelmehl gemacht
    War auch wieder mal gut..
